Loving This Low Carb Life

I've been living the low carb life for four months now, and loving it. I haven't been exercising like I was the first two months so weight loss has slowed, but I am still seeing results. I just pulled out my fall/winter clothes, and jackets that I couldn't even think of zipping last year are zipping this year. Still have a little bit to go before I can comfortably zip them, but I'm excited about the progress. Sometimes I get off track. (Shakes fist at McDonalds for having such yummy breakfast items). But, overall, planning and leftovers have made my journey a successful one.

I made one of my favorite low carb meals tonight: bunless hamburgers and grilled mango slices. I was really craving fries so I found a paleo sweet potato fry recipe. I stopped at Ingles on the way home and was pleasantly surprised to find that sweet potatoes were 88 cents a pound. I bought some and headed home. Side note: sweet potatoes are not easy to cut. I almost took off a finger. Finally I got enough cut into matchsticks (that's what the recipe said to do), tossed them with coconut oil, sea salt, and paprika and put them in the oven to bake. I grilled up the hamburgers, threw some cheese and sauteed peppers on them (shout out to Benjamin for cutting and sauteing the peppers) and then grilled the mango. 

The meal was amazing. Grilled mango has to be my number one food. I know that fruit isn't technically low carb, but I make an exception every once in a while since fruit is good for you.
